Both a Lasallian and a UP Los Baños alum, Mr. Gil Acuña is a product of the best educational institutions. He is a degree holder of B.S. in Human Ecology and finished a Master’s Degree in Learning and Teaching with distinction at DLSU.
He spent long years in the hospitality industry in the training division of human resource departments of various hotels and resorts. This background gives him the unique advantage when teaching hospitality subjects such as Front Office, Housekeeping and Food and Beverage courses.
Mr. Acuña believes that every Benildean student is meant for something great, whether as a professional or as a private citizen. This is why for him intellectual capability must always be matched with an ascending character.

Loren Alcala is a graduate of BS Tourism at the University of Santo Tomas. Immediately after College, she landed on a career at the Manila Hotel as a Food Attendant. Her dedication and perseverance took her up the ladder of success until she became Outlet Manager.
Apart from teaching, Ms. Alcala is a consultant for Food and Beverage Services, holding trainings and workshops for different properties here and abroad to institutions who value their customers and wish to upgrade their level of service. She is currently enrolled in her post graduate studies, MS in Tourism and Hospitality Management at Benilde. Driven by passion, she finds fulfillment in coaching and mentoring the young, future hospitality leaders.
During her spare time, she loves to be in the kitchen and prepare food for the family. She also enjoys shopping with her children.
Chuchi P. Alcoseba
Chuchi P. Alcoseba is a Full-time Faculty and Practicum Coordinator of De La Salle-College of Saint Benilde. She is an excellent motivator and mentor of people and staunchly espouses the learner-centered approach in honing leadership and communication skills. With her 15 years of experience in food and beverage operation and 12 years as duty manager concentrated in front office and handling guest concerns, Ms. Alcoseba has carried with her a culture where employees focus on their role of delivering excellent service by maintaining high morale and team spirit.
She graduated Cum Laude from the Philippine Normal College with a Bachelor of Science in Foods and Nutrition degree. She is a licensed Nutritionist-Dietitian and is currently taking up Masters in Tourism and Hospitality Management, expecting to bridge the gap between the Hotel Industry and the Academic World.
She loves to go shopping with her granddaughter in her free time.
Currently finishing his master’s degree in Tourism and Hospitality Management in Benilde, Frederick Ang received his undergraduate studies from UP Diliman with a B.S. in Hotel and Restaurant Administration.
Holding dual posts as Vice President of Image Travel & Tours Corporation and Part-time Faculty under the Tourism track at Benilde, Mr. Ang’s career has also included working in hotels such as Waterfront Hotels and Casino, Marco Polo Plaza Cebu, Manila Midtown Hotel, Holiday Inn Manila, and Amanpulo.
A lover of both living dogs and dog figurines and incessant calorie counter, Mr. Ang travels whenever the opportunity presents itself.
Atty. Mildred D. Gabriana-Alcala
Mildred D. Gabriana-Alcala is a lawyer by profession and HR practitioner and teacher by occupation. Admitted to the practice of law in 1975, Atty. Alcala spent some forty years in the corporate world, handling the HR functions of a manufacturing company for twenty years and later on venturing into the hospitality industry.
Atty. Alcala Completed her Bachelor’ degree in Business Administration at the University of the East in 1969 where she received the TOP 69 graduate awards. She then pursued her law studies in the same university, finishing her law degree in 1974 and consequently being admitted to the BAR in 1975.
Not satisfied with her BBA/LLB degrees, after attending to the education of her three children, Atty. Alcala attained her master’s degree in Business Administration in 2005.
After her retirement from the corporate world, she now handles consultancy jobs in both HR and legal work for two firms. Endowed with passion to share her knowledge and skill, Atty. Alcala is actively involved in the academe of Benilde’s School of Hotel, Restaurant and Institution Management.
As part of her community involvement, Mildred was CO-Chairman/President of the San Lorenzo Parish Pastoral Council for five years and secretary of the council for two years. She was also a former Director of the Homeowners Association in her community. At present, she is the Vice President of the Our Lady of Fatima Sub-Parish Pastoral council in Ciudad Real, San Jose Del Monte, Bulacan.
Maria Lourdes B. Bendebel
The passion for teaching for Maria Lourdes Bendebel started very early in her student years. Though she did not pursue teaching right after college, this desire was rekindled after having mastered the ropes of the travel industry for two decades. She sees teaching not just a way to impart knowledge but more of engaging and inspiring students to carve their chosen paths.
Ms. Bendebel finished Hotel and Restaurant Management in St. Paul College Quezon City and pursued her Bachelor of Science, Major in Tourism from UP Diliman . She has a Master’s Degree in Business Administration from the Ateneo Graduate School of Business.
An insider in the travel and tourism industry for 29 years now, who has gone the route from being an employee to an entrepreneur, Ms. Bendebel has brought her experience to Benilde’s table.
Travelling, whether on business or leisure, and indulging in a good book, are Ms. Bendebel’s way of recharging and relaxing.
Jester Garcia Arellano
Jester Garcia Arellano is a proud alumnus of De La Salle-College of Saint Benilde with a degree in Hotel and Restaurant Institution Management. He is currently taking his master’s degree in Tourism and Hotel Management in the same institution.
Chef Jester started his career as a banquet chef in New World Hotel Makati. He then became part of the research and development team of Greenwich Pizza. Now he is the leading Benilde’s Solomon Guesthouse Kitchen team that is known for innovative and creative dishes. To stay updated he travels in and out of the country in search of new inspiration and ideas with which to astonish his diners.
He maybe strict in his class and meticulous with his students’ output, but he believes undergoing this experience makes his students understand their commitment to their chosen career. He aspires to transform more students to be hoteliers that could move the world with their values, creativity and dreams.
Aside from school work, Chef Jester promotes Filipino dishes in a modern way. He is a proud Filipino chef who revolutionizes and innovates traditional dishes, refining cooking technique while preserving the culture and history. He believes the only way for Filipino cuisine to be recognized globally is by adapting to the changes.
Antonio Andres Bernardo Jr.
A Certified Public Accountant (CPA), Antonio Andres Bernardo Jr. obtained his Master’s in Business Administration from UP Baguio in 1979. He is a graduate of BSBA-Accounting, Cum Laude in 1971 and attended various seminars, training and conferences conducted by the various companies in relation to his profession. He is also a member of the Phil Institute of Certified Public Accountants (CPA) and Government Association of CPAs. After retiring from the corporate world in 2003, he joined the academe through DLS-CSB, APC, UE, and TIP.
He started his career as a junior auditor at SGV & Co. He has been a financial director for the past 15 years in several hotels and restaurants, both local and international, as well as a financial controller of Benilde in 2007 to 2009.
He believes that he is now a full pledged educator with teaching as his passion.
At present, he is the treasurer of the Hotel And Restaurant Financial Officers of the Philippines, an organization which he’s been a member of since 2003.
Leslie Reizel Bitoy
Just like family recipes are passed down to one generation to another, Leslie Reizel Bitoy puts great value in imparting knowledge, technique and skills. She hopes to inspire, share the passion and make a difference to aspiring chefs.
Ms. Bitoy is a graduate of Benilde under the School of Hotel Restaurant and Institution Management; afterwards she further studied in At-Sunrice Global Chef Academy in Singapore where she obtained a Diploma in Pastry and Bakery Arts.
Ms. Bitoy is part of the pioneer team for TWG Manila. She has extensive experience in production, buffet, banquet and club services for celebrity restaurants in pastry and bakery to establishments such as the Marina Bay Sands.
Ms. Bitoy enjoys traveling. She makes it a point that in a year, one of her trips must be somewhere she'd never been to. She does a little blogging and sometimes likes to stay in and watch Korean drama shows.
Rafael Eduardo H. Bonanza
In living a vocation he is passionate in, Rafael Eduardo Bonanza enjoys sharing his colorful experiences and extensive knowledge to future leaders in the field of tourism.
Mr. Bonanza obtained a Master’s degree in Business Administration at Cavite State University and studied Aircraft Maintenance Engineering at the Philippine Air Force College of Aeronautics. At present, he has accomplished various airline duties from being a station duty officer, key account manager, to passenger service manager of international airlines. He has also been in the academe for six years and is continuing to enjoy every moment of it.
With previous experience in theatre arts, Mr. Bonanza has been involved in Filipino movies and plays such as a Filipino rendition of The Little Prince and iconic series like Noli Me Tangere.
He enjoys travelling, sharing years of experience, and having a continuous pursuit of knowledge in learning and development.
Maria Mercedita C. Brodit
IMaria Mercedita Brodit took a Foreign Service degree wanting to become a diplomat. She became a resident scholar at the Lyceum of the Philippines and was active in different school organizations like the Tanghalang Batingaw, Rotaract International and the Student Council. In her junior year she became a working student at Jollibee-Taft where she was assigned as Store Marketing Trainee. Her first job after graduation was with Alliance Française de Manille where she became the School Affairs Coordinator. It was during her employment here that she continued her French language studies and passed the Diplôme d'Etudes en Langue Française A1 examination.
Ms. Brodit finished her MA in Linguistics from the Philippine Normal University and is determined to finish her Doctoral studies in the same field. “Madame Brodit” has been in the teaching profession for almost 20 years now and has been with Benilde since 2003. She volunteers for the College’s Alternative Learning System and is actively involved with student activities as faculty adviser for the student group Vateliens in Progress. She becomes fulfilled when she witnesses the transformation of her students from quiet and timid boys and girls into confident and empowered young men and women.
Being married for 27 years to her high school sweetheart and having 5 beautiful children gives her happiness beyond compare. It is really no wonder why when you meet her along the corridors of AKIC you will always be greeted by her smile.
Kim Marie R. Castillo
Kim Marie R. Castillo is a full-Time Faculty in Benilde where she teaches Culinary Arts in the School of Hotel, Restaurant, and Institution Management. She started hercareer in the Hotel Industry and is now a consultant for Restaurant Operations Management or Supply Chain Management. She has ongoing relationships with clients such as BOSCH Pilipinas and Hafele.
Ms. Castillo has been a hardcore volunteer for the NGO group Yabang Pinoy for over five years. On weekends she loves going on overnight trips to the beach with her family and friends.
Ms. Marie Castro gained her industry experience, specifically in the areas of event management and sales & marketing, from international hotel chains such as the Holiday Inn, Dusit Thani, and Shangri-La. She is currently an Assistant Professor teaching professional courses in Hospitality Management. Ms. Castro also leads various SHRIM activities as well as some Benilde and De La Salle events. Additionally, she is a concurrent lecturer at Benilde School of Professional and Continuing Education’s program in Professional Event Management.
Ms. Castro is completing her Doctor in Business Administration degree at St. Paul University Manila, the institution where she earned her MBA Major in Hotel & Restaurant Management. Her Bachelor’s Degree in Hotel & Restaurant Administration is from the University of the Philippines, Diliman.
Ms. Castro is also an avid reader and loves to travel with her husband and son.
Baby Lynn Centeno
To Baby Lynn Centeno, teaching is ensuring that students will understand the subject being discussed by giving vivid explanations and connecting actual experiences or giving examples that the students can relate to. She believes that her the experiences in the hotel industry are the best teacher as it has improved her skills and knowledge.
She finished her Bachelor of Science in Business Administration major in Management at the University of the East. Right after graduating from college, her father urged her to continue with her graduate studies and earned her Masters in Business Administration at the University of Santo Tomas, which was instrumental in landing her a supervisory position in credit and collection.
Having been exposed to the workings of credit and collection, she became a Manager in Hotel Nikko Manila Garden for several years until she moved on to Days Hotel.
Currently, aside from teaching part-time in SHRIM, she also does consulting work for credit card companies.
Spending weekends with her “apo” at the mall is her way of relaxing.
Chef Pierre Cornelis
Chef Pierre Cornelis graduated from Ecole Hotelier et tourisme de Liege in Belgium and worked as a chef in a classic gastronomic restaurant after his studies.
Armed with a good working experience, he later ventured to the south of France where he had stints with different dining establishments close to the Mediterranean Sea and Corsica, where he further polished his skills in Mediterranean cuisine.
He later moved to Montreal in Canada to work with leading hotels like the Westin Montreal and the Hilton. For five years, he was Executive Chef of Le Spa Eastman where he specialized in healthy cuisine. Chef Cornelis had written a cook book, “Le Spa Eastman a Votre table,” featuring 100 nutritious recipes which won the gold award in 2006 as the best culinary cookbook (in French) at the annual Cuisine Canada co-organized by the University of Guelph(Ontario).
Prior to joining Benilde’s School of Hotel, Restaurant and Institution Management in 2009, he opened La Regalade, a French restaurant considered as one of the best in Metro Manila, in Makati from 2008 to 2009.
At present, Chef Pierre Cornelis is Chef Instructor and Executive Chef of Vatel Restaurant Manila.
Carmen G. Cruz
Among the many cost controllers in the Philippine hospitality industry, Carmen Cruz is
highly respected and looked up to for her expertise and experience in cost control, a
field she went into soon after she graduated from UP Diliman with a degree in Bachelor of Science in Hotel and Restaurant. She will complete her MBA degree from the Ateneo Graduate School of Business.
When she came to teach in Benilde’s School of Hotel, Restaurant and Institution Management in 2006, she brought with her twenty years experience from the hospitality industry after her early retirement
from the Peninsula Manila. She was the hotel’s Cost Controller until December 2005 and simultaneously managed the Peninsula Newsstand/Boutique from 1994 after the hotel undertook direct management of the boutique. Prior to Peninsula she worked with three other hotel groups including the new and modern Taal Vista Hotel. Now a fulltime faculty at SHRIM, Ms. Cruz handles senior level courses on Cost Control and Analysis, Institutional Purchasing, Financial Management, Entrepreneurship and Culinary Information Systems. With all her sons graduated, she dreams to cap her accomplishments with publishing a book on cost control for the Philippine business setting and her own resort cottages in Mindoro Occidental.
Ma. Caridad Angelyn Soriano-De Mesa
Ma. Caridad Angelyn “Ycay” Soriano-De Mesa has been in the travel industry for over 30 years now. She was senior account executive, billing and collection assistant, head for promotions, head of travel industry sales, and singer/musician in previous employments. She is a full-time special events officer in the Philippine International Convention Centre (PICC) since 2001.
Her teaching career started in 2001, when a former colleague challenged her to try a part-time job in the academe. After her mock-up teaching in the College of International Tourism and Hospitality Management Lyceum of the Philippines University, it became a passion for her to share her knowledge with future tourism and hospitality service providers. After her stint with LPU, she was invited by De La Salle University-Dasmariñas to teach in the College of Business Administration and eventually landed a teaching post in Benilde. Ms. de Mesa believes that experience is the best teacher. Although her undergraduate was in Advertising and Public Relations, her practice in the tourism and hospitality industry honed her to be the educator that she currently is. Pending her thesis on Meetings, Incentives, Conventions and Expositions in her post graduate studies as a grantee at Benilde, she will already be a full-pledged Master of Science in Tourism and Hospitality Management (MSTHM) graduate.
Ms. De Mesa is a mother of two, Bertha 23, a Graphic Artist of Vibal Publishing Group of Companies and Josef 19, a 3rd year Occupational Therapy student of University of the Philippines-Manila.
Evelyn Ferraris, a Certified Public Accountant, graduated cum laude in BS Commerce major in Accounting from Far Eastern University and is a recipient of the Gold Medal Award for Academic Excellence in Accounting and Auditing. She earned her master’s degree in Business Management from PUP/St. Francis of Assisi College.
Responsible for the accounting system design and installation in several hotels and restaurants, she considers herself an expert in systems design and installation, credit and collection and management advisory services.
She has been in the academe for more than seventeen years teaching in various colleges and together with other CPA peers, credits herself with producing top notchers in the CPA board examination. One of the most important concepts Ms. Evelyn Ferraris hopes to impart is that accounting and finance should not be feared but enjoyed by any student .
Jack Jude Garcia
Jack Garcia’s career spans 30 years of experience in the travel trade doing sales, customer service and account management and a stint as a management trainee for a fastfood chain.
Armed with an AB degree in Hotel and Restaurant Management from DLSU (then on a shared degree program with its neighbor, St. Scholastica's College) he went on to continue graduate studies in Tourism and Hospitality Management at Benilde’s School of Hotel, Restaurant and Institution Management.
In between jobs, he also did part time work writing for different trade journals. Growing up under the influence of his maternal grandmother, who was a school teacher herself, and many of his teachers helped shape him in pursuing his current passion, teaching.
In addition to teaching, Mr. Garcia shares his time with the Tulay ng Kabataan Foundation doing volunteer work as Treasurer of its Board of Directors.
Having been an avid collector of model planes during his childhood years, he still is excited at the thought and the act of flying, unceasingly fascinated as he is by what many refer to as the romance of travel.
Sir Julius Hill
Sir Julius Hill (“Sir Sir” as his students calls him) is the product of Benilde’s Expanded Tertiary Education Equivalency Accreditation Program (ETEEAP) with a degree in Hotel Restaurant and Institution Management specializing in Hospitality Management.
He was with the food and beverage operation of the cruise industry’s Carnival Cruise Lines and Holland America Lines for almost 18 years. He is a veteran training manager as well from a respected chain of hotels in the middle east. He handled restaurants locally for the opening team twice.
Mr. Hill is generous in sharing his knowledge to his students. Being with a learner-centered institution gives him the advantage of cultivating the character and skills of his students and ensuring that they will be able to adapt well in the real world once they have left the boundaries of the College.
Mr. Hill is currently taking up his Masters of Science in Tourism and Hospitality Management in Benilde to stimulate his mind and become a better mentor to his students and an asset to the in the academe.
He enjoys his free time running, playing basketball and spending days in the beach with his family.
Dr. Emiliano T. Hudtohan
Dr. Emiliano T. Hudtohan has almost 5 decades of combined corporate and academic experience and continues to teach through edutainment: education and entertainment. A former De La Salle Brother (1961-1978), he was schooled in the Lasallian educational system from 1957 to 2005. He earned his AB-BSE (magna cum laude), master’s in education and doctorate in values formation from De La Salle University, Manila. He was trained in human development at the De La Salle Brothers’ Center at Sangre de Cristo, New Mexico, USA. He served as member of DLSU board of trustees, supervised La Salle affiliated schools, and served as principal and director La Salle schools in Lipa and Iligan.
He was training director and assistant to the president of Malayan Insurance Company and training consultant of Metrobank management development program. A retired DLSU professor in the College of Business, he now teaches in the doctor of philosophy program of De La Salle-College of Saint Benilde, De La Salle Araneta University, and San Beda College Graduate School. He is a thesis and dissertation in these three institutions.
He is cofounder and president of AcademiX2Business Consultancy, Inc. He is published in local and international academic journals. He was regular columnist of Manila Standard Today on issues related to social responsibility and social development (2006-2014). He is also a local and international resource, especially in Sulawesi, Indonesia for CSR among mining companies. He is an avid global traveler having visited countries in Asia, the United States and Europe since 1973 to the present.
Delia A. Ignacio
Delia A. Ignacio is one of SHRIM’s pillars in academic excellence and extra-curricular activities. She boasts of a 16 year teaching experience in nutrition and culinary courses. She is prefect of academic advising while superintending the culinary laboratory unit. Prior to her recent positions, she has gained rich industry exposure and delicate functions in public health, administration, academe and food service in reputable institutions.
She graduated from the Philippine Women’s University with a degree in BS in Foods and Nutrition. She also has double Master’s degrees in Community Nutrition from the University of Queensland in Australia under the Australian Development Assistance Bureau scholarship, and another in Learning and Teaching from DLSU.
Ms. Ignacio is a licensed nutritionist and dietician who spends time doing voluntary work together with the various disciplines of the university where she formerly belongs. In the restaurant industry, she used to be affiliated with one of the oldest restaurants in Manila, The Aristocrat. She worked as Reservation and Catering Manager handling ales and marketing. She was also responsible for initiating and developing the sales strategy and unique marketing collaterals that augmented the revenue and profit of the restaurant during her stint.
She is an adventurous person and loves to travel with friends. Travelling for her serves as an opportunity to temporarily disconnect from the regular life and daily routine. It is a re-charge and reward from a hard day’s work and invigorates the youthful exercise of teaching whenever returning from vacation.
Shirley Ann F. Joseph
Shirley Ann F. Joseph comes from a long line of educators. Her maternal grandmother, mother, older sister, even her mother-in-law and aunt-in-law were and are all in the teaching profession. After being a homemaker and food business owner, Ms. Joseph naturally gravitated to becoming a teacher herself.
She went to UP Diliman as a Hotel and Restaurant Administration student and moved on to the Philippine Women’s’ University and finished with a BS Food Technology degree with honors. She also has a Certificate in Food Service Management from UPHE Diliman. At present she is finishing her master’s degree in Entrepreneurship at the De La Salle University.
While busy raising her family, she was involved in several food business endeavors, quick service restaurant franchises, food stands and a chocolate boutique. She owned and managed these food outlets.
She was a facilitator in the Summer of Service in Nueva Ecija. She taught a rural poor community several food recipes with some ingredients found in their backyard with the intention of selling these food items. She is also a board member of Living Free Foundation, a group which helps families with chemical dependents.
A widow for several years now, she is a dancing enthusiast. She is also an avid fan of K-Pop and Asian dramas. She enjoys bonding with her children and their spouses and her grandchild. She is looking forward to more grandchildren.
Peachy Juban, a founding member of the Pastry Alliance of the Philippines and one of the most respected cake designers in the Philippines, is popularly known for her signature lantern cakes that incorporate bespoke designs and light. Her Shortcrust Pastry Shop in Parañaque City that began as a hobby has evolved into a 22-year tradition.
Chef Peachy, a 12-year veteran chef-instructor at Benilde’s School of Hotel, Restaurant and Institution Management, is an inspiringly successful competition coach and a recent appointee as Senior Industry Fellow for Pastry Arts. She conducts workshops and judges pastry competitions both locally and around the region. Alongside other established industry authorities, she was part of the demonstrators at the 2012 Asia Pastry Forum in KL, Malaysia and is a regular guest chef at the Macaron Pastry Training Center in Bangkok, Thailand. A Wilton USA certified instructor, Chef Peachy handles cake decorating classes at Gourdo’s World Market Alabang. There is a wait list for the much sought-after Discover Shortcrust programs offered at her private kitchen.
Angelo Marco U. Lacson
The magic in School of Hotel, Restaurant and Institution Management Dean Angelo Lacson’s classroom roots from the very first time he witnessed the success of a former student. He hopes to make a difference in the lives of aspiring hoteliers through engaging, inspirating and empathizing with students.
Apart from school work, Mr. Lacson advocates quality hospitality education thru volunteer work as an accreditor of PAASCU. He also currently serves as a member of the board of the Hotel and Restaurant Association of the Philippines.
At UP Diliman. he studied Hotel and Restaurant Administration. He later on earned his master’s degree in Learning and Teaching at De La Salle University where he graduated with distinction.
His background includes food & beverage, wine, franchising, administration and management with past entrepreneurial endeavors in catering, restaurant, and food carts/kiosks and brands such as the Marriott and Days Hotel.
A dedicated school administrator, Mr. Lacson recharges by going to the beach with his two children as often as he can.
Robert Lao, CPA, U.P. MBA has been a part time faculty of the School of Hotel, Restaurant and Institution Management since 2007 in accounting and finance courses. Prior to this, he had local and international corporate experiences in his field of specialization. In 2005 to 2010, he was part time faculty member of Asia Pacific College and Manila Business College, also teaching college and post-graduate degree programs.
As an entrepreneur, he has two decades of total management practices in feeds manufacturing and in restaurant/bar operations in Metro Manila. These experiences made him the teacher with many business stories to share with students in classrooms. His stories have been called the “Robert Lao Experiences”.
His travels make him a person with an open mind. He is a Greenpeace Philippines volunteer. He aims to finish his doctoral degree from De La Salle University and hopes to write papers in agribusiness. At present, he is a weekend farmer in the mountain forest of Rizal.
Jade Christopher Lee
In 2009, Jade Christopher Lee graduated magna cum laude with a BS in Hotel, Restaurant, and Institution Management, Major in Culinary Arts from Benilde.
Experiencing both the service and kitchen side of the industry, he has worked as recipe consultant for Nestle Philippines, restaurant supervisor for Agave Mexican Cantina, and captain waiter, pre-opening team, for Midas Hotel and Casino. Early 2011, he decided to move to Singapore where he worked as assistant pastry chef for Fruit Paradise and pastry chef for Verre Wine Bar and Shelter in the Woods before finally joining the academe in 2014.
Chris is a self-proclaimed pokemon master, frustrated theater actor, and enjoys magic and adventure.
Teaching was the least likely career path that Noveena Lopez would have taken after retiring from Dusit Hotel after 32 years of service. But it was exactly what her friends encouraged her to do and which she took on. She considered it a challenge and an honor to share her experience with students who wanted to thrive in the industry as she did. So she immediately went on to earn her diploma and is now competing her master’s degree in Business Administration at Urdaneta City University, while teaching part-time.
Her career in the hospitality industry started when she was taken in as housekeeping attendant in Dusit Hotel (formerly Manila Garden Hotel then Hotel Nikko Manila Garden) at 18. She rose from the ranks through hard work and perseverance and held various positions in operations. Before her retirement, she held the position of restaurant manager.
Ms. Lopez is a member of the Network Enterprising Women, a group that advocates for women entrepreneurs.
Maria Victoria Lucasan
A nutritionist by profession, Maria Victoria Lucasan graduated from St. Paul College of Manila with a degree in BS Food and Nutrition. Having been in the food industry for 23 years, she has taken roles as an operations manager, human resources manager, research and development consultant among othets. In 2013, she graduated magna cum laude for her MBA.
Her real passion is baking, reading and doing art crafts. On her free time, she would bond with family members and friends.
Teddy S. Manansala
Teddy S. Manansala is DOST scholar, registered nutritionist-dietitian, and a certified U.S. ServSafe Manager. At UP Los Baños, Mr. Manansala graduated BS Nutrition as full scholar. He obtained his post graduate diploma in Environment and Natural Resources Management at UP Open University.
His more than a decade of experience as an academician is a testimony of love for his craft. He has vast experience in classroom teaching and learning and was a former trainer for secondary teachers of MIMAROPA in science education. Culinary science, food safety, food chemistry, food and nutrition, meal management, chemistry education, and environmental science are his fields of expertise.
Photography, his second love, Mr. Manansala is also a photographer-artist.
Chef Kristine Perez shares 12 years of experience in making delicious and healthy dishes with her students. Through the years, she has grown in her expertise by preparing food at a reduced cost without compromising quality and taste.
She graduated with a BS in Hotel and Restaurant Administration from UP Diliman, and further studied Hotel and Restaurant Management at Les Roches Switzerland. Since 2004 Chef Kristine also studied Italian cuisine at the Italian Culinary Institute for Foreigners in Asti, Italy, and the Italian Food Style Education in Turin, Italy. She also participated in the Experiential Learning for Culinary Sciences at La Salle Beauvais, Beauvais France.
As an instructor and administrator, her training in quality procedures and regulations has been an advantage, being adept at efficiently managing a kitchen brigade of chefs and cooks, and a team of chef instructors, who just like her are passionate about teaching young, new talents who aspire to build a career in culinary arts.
She brings her wealth of talent to empower students to grow in creativity and be team players as they hone their basic kitchen skills.
Vincent R. Pilien
Vincent R. Pilien earned a Physical Therapy degree from the Emilio Aguinaldo College. He also obtained a Business Management and Master in Business Administration degrees from the Pamantasan ng Lungsod ng Maynila.
The Philippine International Convention Center, National Commission for Culture and the Arts, Cultural Center of the Philippines and the San Miguel Foundation for the Performing Arts are the prestigious institutions that contributed to his expertise in events organizing and management. In addition, his experiences with the Organizational Change Consultant, Inc. allowed him to be a part-time life coach and leadership program facilitator.
Apart from being a member of the M.I.C.E. industry and the academe, Mr. Pilien is a real estate broker accredited with various developers such as Ayala Land, SM Development Corporation, DMCI and Federaland.
A dreamer and a conqueror, Mr. Pilien never fails to appreciate the beauty of life by travelling around the world, recognizing and understanding cultures, and sharing his experiences on social media.
A bona fide Lasallian, Jerwin Pineda finished his primary and secondary education at La Salle Green Hills and graduated with a Bachelor of Science degree in Hotel, Restaurant, and Institution Management at Benilde. He is currently taking his Master of Science in Tourism and Hospitality Management under the same institution.
A dedicated professional with 14 years combined experience in the hospitality industry and the academe, Mr. Pineda specializes in the areas of bar and beverage management and food service systems.
Relative to his profession and expertise, he is an executive officer and co-founder of the Organization of Bar Professionals, a prominent bartending group that handles training workshops, seminars, consultancies and beverage catering.
As part of his advocacy in the bartending profession he has trained students who have participated, won, and have been given recognitions in prestigious events.
Benigno Glenn Ricaforte
Benigno Glenn Ricaforte's more than twenty years of solid work experiences revolved primarily in food microbiology, food safety management systems and quality management vis-a-vis with sufficient knowledge and industry exposure in food production, microbiological laboratory diagnostics and marketing.
At present, he is an assistant professor of tourism and hospitality management, and concurrently the program chair of graduate studies at Benilde’s School of Hotel, Restaurant and Institution Management handling food safety, research methods and business management courses alongside his active participation in research. Food safety, learning and teaching and ecotourism are his research interests. He is now on the final stage of his doctoral studies in education at the University of the Philippines.
In general, his education, training and work experiences helped him to evolve as a total individual with a keener perspective to serve other people without sacrificing his values.
Lora Lee Reboton
Lora Lee F. Reboton started her marketing career in the hospitality industry with Hotel Nikko Manila Garden, which later rebranded to Dusit Hotel Nikko. Ms. Reboton took charge of developing relations with the press and promoting the hotel's activities and cultural events, until she moved on to creating marketing communications strategies for Canyon Woods Resort Club and Punta Fuego.
After her stint with these properties, she moved on to become the vice president for branding and communications of two financial services company, heading the branding and communications department while concurrently planning and implementing incentive travel and convention events for the companies' top performers. She is a graduate of BS Tourism from the University of the Philippines, with MBA units from the same university. Currently, she is finishing her master’s degree in Tourism, Hotel and Restaurant Management in Benilde.
Tiffany Anne G. Santuyo
Tiffany Anne G. Santuyo is a registered nutritionist-dietitian and is at present a full-time faculty in Benilde, teaching food chemistry, nutrition, and basic culinary subjects. She majored in Nutrition and Dietetics at St. Scholastica’s College and earned masteral units in Nutrition from UP Diliman. Ms. Santuyo is and currently finishing her graduate studies in Tourism and Hospitality Management in Benilde.
After college, she worked as a figure consultant at Slimmers World International, and then became a diet coach for FitFactory.com, a US-based diet company. She moved on to nutrition consultant and researcher position at VMV Skin Research Centre and Clinics.
Her passion for her profession also led her to doing nutrition lectures and activations on behalf of some multi-national companies, and later, to becoming an ambassador for Alaska Milk Corporation.
Dennis S. Sebastian
Mr. Dennis S. Sebastian’s thrust is to impart actual hotel practices from his 23 years of experience as hotelier with his students. He started as a butler in Sheraton in K.S.A., and was awarded as employee of the year. His career advanced when he went back to Manila when he was promoted as duty manager in Manila Galleria Suites up to its transition to Holiday Inn Galleria Manila. He also gained exposure in sales at The Manor in Camp John Hay. He worked as night manager in a hotel in Ireland where he was the only Filipino. He considers his promotion there as one of his significant achievements.
He continued to move up the ladder by taking an executive role in various hotels and resorts such as Grande Island Resort in Subic Bay, The Mabuhay Manor, and Hotel Benilde Maison de La Salle.
He is currently enrolled in Olivarez College Graduate School taking up his MBA.
Marian Tesalona is a registered nutritionist-dietitian by profession and an academician by vocation. She earned her degree in Foods and Nutrition from St. Scholastica’s College and her master’s in Business Administration from Colegio de San Juan de Letran. Her academic career started when she pioneered the Hotel and Restaurant Management Department of then Lyceum of the Philippines. For over twenty years, she has held key positions in different schools and universities.
Currently, Ms. Tesalona is engaged in advocacy work as Managing Director for Enlivenr and Zeal Zenith, health and business support organizations, respectively, that conducts free discussions to individuals and groups.
Athena Trifonia Rueda-Tiglao, RND, MAEd
Inspired with healthy living, Athena Trifonia Rueda-Tiglao is a registered nutritionist-dietitian. She finished her undergraduate studies in Bachelor of Science Major in Nutrition-Dietetics at the College of the Holy Spirit in Manila. Though she started in foodservice companies like Wendy’s and Pancake House, her career blossomed after college in Slimmers World International where she explored the fitness industry from being a nutritionist to chief nutritionist-figure consultant. Having experienced managing the diets of various weight management clients equipped her with skills in diet counseling.
In promoting global nutrition, she moved on to the corporate world as a nutrition specialist in Bristol-Myers Squibb (Meadjohnsons,Phils.Inc.) which gave her the experience to travel and promote good nutrition to the North, Central and South Luzon provinces and the NCR. As she resumed her career in Manila, it opened her enthusiasm for teaching.
In the pursuit of excellence, she finished her Master’s Degree Major in Administrative Supervision at Dr. Carlos Lanting College in 2012. Currently a part-time faculty in Benilde for nine years in the School of Hotel and Restaurant, Institution Management. Athena, holds a position as a board member of Philippine Society of Nutritionists-Dietitians. She participated in the logistics and financials of national conventions and all sorts of seminars under the PSND.
Lorena Valerio has a 15-year experience in marketing and operations management, an AB degree in Mass Communications from the Centro Escolar University, a master’s in Business Administration degree from the Ateneo Graduate School of Business, and a post-graduate diploma on Training Development and Management from Benilde’s School of Professional and Continuing Education tucked under her belt.
A former director of sales and marketing of three hotels, Ms. Valerio initiated the development and implementation of an efficient sales and marketing system and procedures in her company. She took part in the ISO certification and compliance, and the Balance Scorecard Management System, and her company’s pursuit of the Philippine Quality Award.
Ms. Valerio is an active member of Philippine Marketing Association since 2001 and Philippine Society for Training and Development as a Board of Trustee in 2008-2009.
Victor R. Vibal
From insurance, automobile and the travel and leisure industries, Victor R. Vibal has gathered his experiences and is teaching and sharing the concept of customer service of the tourism industry to the new generation of tourism practitioners.
A degree in BS Commerce major in Marketing from the San Juan de Letran College molded Mr. Vibal into a well-rounded marketing person throughout his business career. The continuous call for further learning finally pushed him to pursue studies in Masters in Hospitality and Tourism Management with the De La Salle-College of Saint Benilde.
Victor’s 26 years of work experience included the airline, Spanish Tour Operator (Philippines and Guam) and several travel agencies; country manager of Triton Distribution Systems; project head for online reservations systems; editor of the PHILTOA newsletter; director of HIS Phils Travel Corp, and author of Principles of Tourism published by Anvil Publishing.
After finishing his Bachelors of Science Degree in Biology at the University of the Philippines Diliman, Chef Jocen Villongco started pursuing his passion in culinary arts by taking up short courses at the Center for Culinary Arts (CCA) Manila. Further culinary education brought him to San Francisco California to study at the prestigious California Culinary Academy.
While in San Francisco, he worked and trained at the Ritz Carlton Hotel. At the same time, he was a personal chef and caterer with clients within the Bay Area.
Once back in Manila as a catering proprietor, he soon found himself doing culinary trainings and seminars which eventually led him to start teaching in Benilde.
Aside from cooking, Chef Jocen is also pursuing his passion for wine, influenced by those days driving through wineries of the Napa Valley.
Mier Jesus G. Zapanta
Mier graduated from Far Eastern University with a BS degree in Electrical Engineering. It was in 1986 when he landed a job in the hotel industry. He joined The Westin Philippine Plaza in 1986 and ended his stint as front office manager.
After more than 18 years of experience in the hotel industry, he transferred to telecommunication companies, Globe Telecom and Sun Cellular respectively. Mr. Zapanta shifted careers by joining the academe when he worked with Benilde’s School of Hotel, Restaurant and Institution Management (SHRIM).
Presently he is a full-time resident faculty and program chairperson of the Hospitality Management Track while currently taking up his MS in Tourism and Hospitality Management in the same school.
